From kitchen to pit: Our smoking journey
The journey to Big E’s Smoke Shack didn’t start with a smoker; it started in a kitchen when I was just a kid. I’ve always found my home in front of a stove, starting with baking and eventually following that natural evolution that happens when you truly have a passion for food. For years, I’d see a dish on TV or try something at a restaurant and immediately start wondering: How can I make this mine? I became obsessed with playing with spices and layering flavor profiles to create something unique. About ten years ago, I threw my first piece of meat on a smoker, and everything changed. I realized that wood and fire add a level of depth that you just can’t get anywhere else. I definitely got bit by the 'smoke bug,' and I’ve spent every day since fine-tuning my recipes and experimenting with new cuts to see just how far I can push the flavor.

More than just BBQ: It's an experience
At Big E’s Smoke Shack, the food is just the beginning. What I really want people to feel is the time, patience, and genuine love poured into every single cook. To me, BBQ isn't just a meal; it’s an experience. There is no better feeling in the world than watching someone take that first bite and seeing the joy hit their face. That reaction is my 'why.' It’s what makes the late nights and the early mornings at the pit worth it—knowing that what I’ve created is bringing people together and making their day a little better.

The heart of the shack: Our family team
While I’m the one managing the fire, Big E’s Smoke Shack is truly a family operation. It starts with my mom. Growing up, she was the 'Thanksgiving Queen'—she’d cook a feast for an army even if it was just the three of us. Our house was the place where every neighborhood kid knew they could get a hot meal and a container of leftovers. From her, I learned that catering isn't just about food; it’s about the spirit of giving and caring for others. Then there is my wife, Jennifer. She is my rock and the person who keeps me balanced (and believe me, I need it!). I’m not always the easiest person to work with when I’m focused on the pit, but she is always there to keep me grounded and supported. Beyond them, we have a whole crew of 'silent partners'—from our dedicated taste-testers to the friends who aren’t afraid to give me that 'hey, try this' feedback that keeps us evolving.
"Big E's Smoke Shack isn't just food, it's a family tradition in the making. The dedication and love in every bite are truly remarkable."
